Chilled Watermelon Salad

This recipe does not need mixing... just lay the main ingredients out on a large cobalt blue salad plate, then cover with mint, feta and olives, and sprinkle with balsamic glaze or vinegar. Gorgeous presentation and simply delicious!

Vegetarian • Gluten free 

Ingredients:
4 cups watermelon cubes or wedges
1 cucumber
1/4 cup or 2 1-inch cubes feta cheese, sliced
1 tbs fresh mint
1/4 cup Kalamata/black olives, pitted and sliced (optional)
3 tbsp balsamic glaze (or just balsamic vinegar)
